Bellota 100% Ibérico is the ultimate expression of Ibérico ham. Its pairing should respect this complexity: nothing that competes, everything that adds to it.

  • Wine:Fino or Manzanilla — the most purist and appropriate option, it cleanses the palate and enhances the ham's natural umami. Cava Brut Nature or Champagne Brut as a festive alternative. If you prefer red wine, opt for a smooth variety — young Mencía, Garnacha, or Pinot Noir — that complements without overshadowing. Avoid very powerful reservas that can mask the ham.
  • Bread:Toasted cristal bread with mild extra virgin olive oil. It needs little else.
  • Other:Toasted almonds and walnuts (they enhance the acorn notes), gordal olives, fresh figs. If you include cheese, save it for another time — both ham and cheese deserve their own spotlight.
