Cebo de Campo ham has more character than conventional Cebo ham, with more pronounced notes that call for more full-bodied accompaniments.

  • Wine: Young, fruity red wine (Tempranillo, Garnacha) that provides freshness without excessive oak. A fresh Verdejo or Albariño also works very well, enhancing the creaminess of the fat.
  • Bread: Sourdough bread with a crispy crust — the subtle acidity of the bread balances the intensity of the Cebo de Campo ham.
  • Other:Toasted almonds, gordal olives, and good seasonal tomatoes with EVOO. The nuts provide the perfect crunchy contrast.
