100% Ibérico Bellota ham is the ultimate expression of Ibérico. Its pairing should respect this complexity: nothing that competes, everything that adds value.

  • Wine:Fino or Manzanilla — the most purist and appropriate option, it cleanses the palate and enhances the natural umami of the ham. Brut Nature Cava or Brut Champagne as a festive alternative. If you prefer red wine, opt for a light-bodied one — young Mencía, Garnacha, or Pinot Noir — that complements without overshadowing. Avoid very powerful aged wines that mask the ham.
  • Bread:Toasted crystal bread with mild extra virgin olive oil. Little else is needed.
  • Others: Toasted almonds and walnuts (enhance the acorn notes), gordal olives, fresh figs. If you include cheese, save it for another time — both ham and cheese deserve their own spotlight.
