Bellota 100% Ibérico (100% Iberian Acorn-fed) is the ultimate expression of Iberian pork. Its pairing must respect this complexity: nothing that competes, everything that adds.

  • Wine:Fino or Manzanilla — the purest and most accurate option, it cleanses the palate and enhances the natural umami of the ham. Cava Brut Nature or Champagne Brut as a festive alternative. If you prefer red, opt for a smooth, light-bodied one — young Mencía, Garnacha, or Pinot Noir — that complements without overshadowing. Avoid very powerful reserves that would mask the ham.
  • Bread:Toasted crystal bread with mild extra virgin olive oil. It needs little else.
  • Others:Toasted almonds and walnuts (they enhance the acorn notes), Gordal olives, fresh figs. If you include cheese, have it at another time — both ham and cheese deserve their own space.
