Bellota 75% has aromatic marbling, nutty notes, and a sweet, lingering flavor. It deserves accompaniments that respect its complexity.

  • Wine:Rioja or Ribera del Duero Crianza red wine with good tannic structure but without excessive oak. Fino or Manzanilla sherry remains the most purist option: it cleanses the palate and lets the ham speak for itself. Cava Brut Nature as an elegant alternative.
  • Bread:Lightly toasted crystal bread with a drizzle of extra virgin olive oil.
  • Other: Toasted almonds and walnuts—nuts enhance the almond notes of acorn-fed pork. Fresh or dried figs add a sweet contrast that elevates the experience.
