The Bellota 75% has aromatic marbling, notes of nuts, and a sweet, lingering flavor. It deserves accompaniments that respect this complexity.

  • Wine:Red Crianza — Rioja or Ribera del Duero with good tannic structure but not overly oaked. Fino or Manzanilla is still the most purist option: it cleanses the palate and lets the ham speak for itself. Cava Brut Nature as an elegant alternative.
  • Bread:Lightly toasted 'pan de cristal' (crystal bread) with a drizzle of extra virgin olive oil.
  • Other: Toasted almonds and walnuts — nuts enhance the almond notes of the acorn-fed pork. Fresh or dried figs add a sweet contrast that elevates the experience.
