Cebo de Campo ham has more character than conventional Cebo, with more pronounced notes that call for more full-bodied accompaniments.

  • Wine: A young, fruity red (Tempranillo, Garnacha) that provides freshness without excessive oak. A fresh Verdejo or Albariño also works very well, enhancing the creaminess of the fat.
  • Bread:Sourdough bread with a crispy crust — the bread's subtle acidity balances the intensity of the Cebo de Campo.
  • Others:Toasted almonds, Gordal olives, and a good seasonal tomato with EVOO. Nuts provide the perfect crunchy contrast.
